Yes, this cake may temporarily cure your depression – but its name comes from it’s history. Apparently, if you believe the hype, this cake was a common source of happiness back during the Great Depression when ingredients such as milk and eggs were too expensive for many folks. So they did it vegan and voila, deliciousness.
I found the recipe on Facebook posted by Vegan Street.
Katie and I made it according to the recipe and loved it. Then we tweaked it by using whole wheat pastry flour (adding an extra 1/2 cup), eliminating the chocolate, substituting the sugar with 1/4 cup of agave nectar, used 1.5 TBS apple cider vinegar, and added 1 TBS lemon juice and some grated lemon peel. Again, spectacular.
It’s cheap, easy, vegan and freaking delicious. Try it.
